The course was not too drawn out and moved fluently between the different modules. I found the ABC cards fun and interacting. The course was very intersting and Terry was very clear and easy to understand. He was also very Knowledgeable. I prefered this course to the other external courses i have been to before.

Terry was a great tutor, he made the course entertaining and interactive, opposed to sitting in a classroom and just staring at the board. He had a great knowledge and I actually took all the information in because of his methods which really helped me as I’m dyslexic.

Highly recommended, very interesting and well presented course.
The trainer (Terry) was very knowledgeable about his subject, and presented it in an entertaining way. I learnt a lot and it was never boring. Use of different training materials and frequent reviews of what we had just covered made it interesting and easy to remember.

Could be more WDS specific
Terry delivered the course well. However I feel that I am able to offer some meaningful feedback based on my past experiences having sat the course several times during my 13 years with WDS. Though the course was adequately presented I felt that knowing the capabilities along with the mindset of some of our often transient staff that it may be e…

By law, food businesses have to ensure that all staff receive safety and hygiene training appropriate to their role. Even if your business has excellent food safety policies in place you need to be sure that your staff understand how to implement these practices, giving them the confidence and knowledge to protect your customers. For more guidance see our article on the importance of training for the food industry.
Download our Food Safety Training Ebook for an in-depth guide to food hygiene and safety. The FSA (Food Standards Agency) is an independent government department which protects the public by making sure that food is safe and contains only the ingredients listed. Its website contains lots of useful information on food safety for the food and catering industry. Here are some specific resources we think you’ll find useful:
Your premises, food, records and procedures can be inspected. Food samples can be taken and photographed. All inspectors must follow the Food Law Code of Practice.
The frequency of inspections depends on the risk your business poses to public health. If you’re a food retailer or caterer you will be inspected on a more regular basis. You can be inspected by your local council at any point and often without prior notice.
Due to come into force on 1st October 2021, the Food Information (Amendment) (England) Regulations 2019 - more commonly known as Natasha’s Law - will amend the current regulations to enforce stricter controls on food labelling and packaging. All Food Business Operators will need to review their current practices to make sure they are following the new legislation. See our article on Natasha’s Law for more information.
There is a great deal of legislation that applies to food businesses including the Food Safety Act (1990), the Food Standard Act (1999) and the Food Information Regulations (2014). What is relevant to you depends on your business type. For more guidance and information on general food law visit the FSA (Food Standards Agency) website.
Your food business premises must comply with the necessary regulations and allow you to prepare food safely, including being kept clean, well-maintained and designed in a way to allow you to follow good food hygiene practices, including protection against contamination and pest control.
The best way to keep food safe from contamination – both bacterial and viral – and prevent food poisoning, is to follow HACCP (hazard analysis and critical control point) principles. Our training courses cover the important practices that staff members should follow to minimise customer risk.
Poor food hygiene and safety practices can allow viruses and bacteria to contaminate food at any stage of food preparation. These include not cooking or storing food correctly, and not cleaning equipment properly after use. Some of the bacteria that cause serious health problems are: E.coli, Campylobacter, Salmonella, Listeria and Shigella while viruses such as norovirus can also pose a risk to consumers.
An allergen is a substance which is usually harmless but is capable of being mistaken as dangerous by your immune system, which can then trigger an allergic reaction. If your customer is exposed to an allergen they are sensitive to this can lead to serious illness or death. Check out our webinar on allergens for more facts on allergens and how to protect vulnerable customers.
Yes. If a customer has an allergic reaction or food poisoning after consuming food sold by your business, you could not only be liable for damages but also prosecuted on a criminal basis if your business has failed to meet legally required food hygiene and safety standards.
Food safety is the responsibility of every stakeholder in the production process from farm to fork. In small businesses, it's usually the owner, operator or team manager who is ultimately responsible for overseeing food safety, staff training, and ensuring legal compliance.
